Pumpkin Gooey Butter Bars

Good Wednesday Morning! 

A couple people asked me for the recipe for my pumpkin bars.  I use Paula Deenes recipe for these.  Top them off with some freshly whipped cream and you will be in heaven!

Pumpkin Gooey Butter Cakes

Cake:
1 pkg yellow cake mix
1 egg
8 tbls butter, melted (That's one stick)
Filling:
1 (8 oz) cream cheese, softened
1 (15 oz) can of pumpkin
3 eggs
1 teas. vanilla
8 tbls melted butter (Yep, another stick.  It is Paula's recipe!)
1 (16 oz) box powdered sugar
1 tea. cinnamon
1 tea. nutmeg

Directions:
Preheat oven to 350.  Combine the cake mix, egg and butter and mix well with an electric mixer.  Pat the mixture into the bottom of a lightly greased 13 x 9 baking pan.

To make the filling:  In a large bowl, beat the cream cheese and pumpkin until smooth.  Add the eggs, vanilla, and butter and beat together.  Next, add the powdered sugar, cinnamon, nutmeg and mix well.  Spread the pumpkin mixture over the cake batter and bake for 40-50 minutes.  (I baked mine 45 min).  Make sure you do not over bake as the center should be a little gooey.

While you will want to eat one of these while they are still warm, (and you should), they are best when they have been chilled for a few hours.
