Tasty Thursday

Happy Thursday! See that silly looking little girl in my blog header? Well, she happens to turn coughcough48coughcough today! Funny, I still feel 16. But trust me, I don't look it!

Today's tasty treat is Sweet Raspberry Muffins. These were soooo good. Even dear son who claims not to like raspberries, liked them. As a matter of fact he said they were "Rockin"! So I think I will call them:

ROCKIN' RASPBERRY MUFFINS:

2 cups biscuit/baking mix (I used Bisquick)
2 tablespoons sugar
1/2 cup cold butter
2/3 cup milk
1/4 cup raspberry jam

Glaze:
1/2 c. confectioners sugar
2 teaspoons warm water
1/2 teaspoon vanilla extract.

In a bowl, combine the biscuit mix and sugar. Cut in butter until the mixture resembles coarse crumbs. Stir in the milk just until moistened (batter will be thick). Spoon about 1 tablespoon on batter into 12 paper lined muffin cups (I used a decorative muffin pan with no paper cups). Top with 1 teaspoon on raspberry jam. Spoon the remaining batter over the jam.

Bake at 425 for 12-14 minutes or until lightly brown. Cool in pans for 5 minutes. Meanwhile, in a small bowl combine glaze ingredients until smooth. Remove the muffins to a wire rack and drizzle with glaze. Yield 1 dozen.

YUM YUM. They really are rockin' with a cup of hot tea!

A VERY HAPPY BIRTHDAY TO YOU MY DEAR FRIEND. I always wanted a birthday twin and now I have one. I do have some years on you but I also feel like I am 16. LOL Well except for my back and hips and my knees too sometimes. Of course the wrinkles and gray hair don't say 16 either, but in my spirit I am still a young girl.I think I always will be.

Happy Birthday, Linda! God bless you! What a cool recipe, and easy. I'd love to try it. You should be getting a little something in the mail. Never mind that it has a Christmas greeting in it. Think of it as a birthday present if you want to.

Hello Linda, HAPPY BIRTHDAY! 48? you are still a kid. smile. You are so cute in that photo. That's by my standards of course. I will be 70 my next birthday. Now that's a birthday to cough about. sigh. I feel young except for my other knee. I will be getting it replaced on Feb. 2nd. OUCH!
I hate to think of all that recovery again but I have to get it done.

Your Rockin Raspberry muffins sound so good. I too use Bisquick often.
